Uh actually no one has ever said anything like that, they were engineered to be girls so that none of them would get pregnant. In both movies and books nothing was ever said about them getting any of the dinosaurs to actually have babies, they used clone tech and fake eggs.

Should have listed Birdo especially since at this moment in time it could be a he, she, or a post-op tranny. I'll stick with what I saw in the smb 2 manual it's a dude who thinks he is a girl. To make this even creepier yoshi and Birdo are apparently a couple. Hell I didn't even know most of the other stuff until I read it on wiki a moment ago.
