Steve Buscemi. Not exactly a chameleon, every character he plays IS Steve Buscemi. And I really like Steve. I think he's a very interesting character actor.

crazy eyes in mr. deeds. animal factory of which he directed he was a clean cut prison warden. Con Air he hasn't had any movies where you can say one was same as another

Nicole Cage & Mark Wahlberg (especially).
These two may as well just walk in between movie sets as they have nothing resembling unique characters in different movies. They appear to do little more than just be themselves, or at the very most, a singular alter-ego.
Their only saving grave to counter their lack of acting skill is they only appear to accept descent scripts.

The eating thing is so true about Brad Pitt. I actually noticed it more so in the Ocean's movies. Nobody makes eating cooler than Mr. Pitt though! Lol
