They spray them with ethylene to turn them at least some shade of red. Unfortunately the phytonutrient levels--and the flavor--don't reach their peak unless the fruit is allowed to mature on the vine. Articles like this manage to sell more tomatoes, but grocery store tomatoes are practically worthless to your body. Farmer's markets == win
