Sorry, I get really pissed off when I see those starved, skinny (and butt ugly) waifs parade down catwalks and what not as being held up as some sort of ideal beauty. I wish they would bring back the WWII pin up girls as a more realistic ideal of beauty. Also, recently, I think Spain and Italy both introduced a BMI "lock", only models who were over a certain BMI point average were allowed on their catwalks because they were getting sick of the emaciated look. However, models aren't models to be pretty, they're models to be walking coat hangers. A waist-hip ratio of .7 has been known to be "universally" attractive for about 20 years. Singh, 1993, popularized the hypothesis. It's been shown to be the healthiest WHR among females. I say "universally" because there is a lot of conflicting information for societies untouched by modern media, but it's probably as universal as you can get.

That's not exactly why ultra-thin women get picked as fashion models. Fashion models are like a canvas and a designer decorates the canvas with clothing. You don't want the canvas detracting from the art and that's particularly true with runway models. Think of them as walking canvas.
That's also why Playboy models are not heroine thin. They have hourglass curves because that gets your engine revved up.
If you notice there aren't that many fashion models that make the transition over to swimsuit because you use different criteria for selecting those models.
