You also have total control of the ingredients, which makes for a healthier ice cream. No Polysorbate 80 or Guar Gum in my ice cream. But there will be a chocolate/vanilla/caramel swirl (yes, I make my own caramel too) along with frozen chunks of bananas.

Anyway, also, when making ice cream, you're not using a ***** ton of cream and sugar. A batch of Philadelphia style ice cream usually uses a 3:1 ratio of cream to sugar. For a little less than a half gallon volume of ice cream, you only need 3 cups of cream to 1 cup of sugar. When making ice cream, air gets whipped into it, which keeps the ice cream from becoming a giant rock swimming in syrup. The more air (overrun), the lighter a serving. This is how "Lite" ice cream is marketed. Servings are measured by volume, not by weight. So, when you buy "Lite" ice cream, you're buying more air. Same thing goes for buying premium ice cream compared to buying cheap stuff. The cheap stuff also has more air. Try weighing a premium half gallon of ice cream and then weigh a lite one or a cheap one. You'll see the difference.

You can substitute yogurt for light cream, making frozen yogurt. Sugar substitution isn't recommended, though...you need the sucrose to keep the ice crystals small.
I'm sure there's a recipe using some sugar substitute like Splenda...but I wouldn't use it. I've thought about using honey, but I don't know if it'll work. That leaves about one door out of the dozen or so in the frozen treat section in Walmart. Once you remove products containing carrageenan or vanillin you pretty much only have a couple of brands. Here's a fun game: find them.
