There's an article I read somewhere out there that was talking about the effects of these chemicals saying that if you were to step on a clove of garlic barefoot in about 5 minutes you would be able to taste it as it would absorb through your skin.

So just put very little garlic powder in your cooking, and eat it only a few times each week at most. - EmoSLWarrior, on 10/17/2007, -0/+1There is much truth to this. However, the real key is raw fresh garlic. Ideally to be crushed within your mouth by your own teeth. The reason is that the beneficial enzyme called Allicin only occurs when the garlic is raw and recently crushed. Allicin loses it's potency very quickly and becomes worthless when cooked or when it sits past about five minutes.

I always use garlic when I cook vegetables. If I don’t use it, I feel like not that much tastier. I have already known some benefits of garlic like helps in Heart Disease, which can lowering cholesterol and blood pressure. But the problem is that you cannot just eat a clove of garlic, as the component responsible for its healthy benefits is destroyed before absorption One way that has been suggested is absorption through buccal mucosa, but it is very irritating.

After mixing the two up and letting cool, take the skin off the garlic cloves, cut in half and plop them in the container. Let sit for several days and then you can eat them raw without the burn. Caution! Don't let roommates find out that the mixture makes a kick ass marinade for BBQ meats on the grill.
