What about medical demonstrations. This technology would be amazing for something like a virtual surgery etc and walking through the operation step by step. The ability for a student to poke and prod bits that you couldn't otherwise do in medical class without leaving a fantastic mess up the walls would be a godsend to cleaning staff! :)
In engineering you could do stress tests of structures. Libraries could have virtual walkthroughs at the front counter so you can find where the book you want will more than likely be. Not to mention a game like Spore where you could design characters like this. I kept thinking of that last bit during the "lava lamp" part of the demonstration he gave. Well that’s a lie how can u throw away an integrated keyboard and mouse on a laptop but you get my drift.
