The difference is that with a professional, you pay her directly for guaranteed service, but when dating, you end up paying third parties in hope of impressing your girl into giving it up. Now, once you get into moving in together, the math becomes way more complex.
That said, there are things you do get from a gf and not from escorts -- but if you just want sex, stick with escorts, sure.
