Hell, you could teach them a language based on clicks. As for sign language, they lack the appropriate number of digits and opposable thumbs.

Alex was an incredibly smart bird, and as an African Grey owner, I feel sorry for his owner. Greys are exactly like having a little kid, and when you have them for this long, they feel like another family member. RIP Alex.

I remember that PBS show with him on it, very cool. I believe this is also the bird that saw Jane Goodall and said "Got chimps?" So that bird recognized who it was and linked that to information about what she did. Think on that, a bird put all that together and communicated.
