On the other hand, really the only thing you see with is light, which is made up of fermions, so in that sense its impossible to see bosons.

I mean, we know how to make subatomic particles, the trick is making the ones that weigh in at the precise eV range where the Higgs Boson theoretically lies. But we definitely know that our process is correct for other particles, since we already make them and can detect their presence, so it is logical to think that we can expel a HB particle in the same way.
