The reason that you cannot duplicate New York Pizza (as well as the bagels) is because it is the water that makes it. If you were to import New York Water then you could make New York Pizza.
Nevertheless - The BEST PIZZA even can be found on Worcester Street in New Haven Ct. There is one place for RED (sauce) Pizza and another for WHITE (oil, garlic, seasoning) Pizza. There's something about the water that causes the bread to taste (and bake, for that matter) differently. What ends up happening is that cooking methods are adjusted to compensate for certain properties of taste, which is why pizza in chicago is so different from pizza in nyc. It's the same with bagels. And coffee. Florida is the same too, something in the water causes the bread to taste.. different.

Everyone in NYC knows it is because of the chemical composition of city water used in the dough - and then only certain neighborhoods.
There is this place not far in Westport Ct that can do it, they are in the train station to NYC and I think they actually have their dough water shipped in.

They serve the best damn pizza in all of the bay area and they never once use pizza sauce or meat and yet they still serve a mighty pizza b/c the olive oil they use is a perfect substitute. Hell they even have live jazz music in their place, just to fancy up the place.

You really can't get real pizza unless you go to NYC, or at least to the NJ shore. That's real pizza. Dominos, Papa Johns, etc, isn't even CLOSE to being real pizza. South bay there isn't much good pizza but east bay (mainly Berkeley) and san fran there is some good pizza places. In san fran there are a couple of places that, to me, taste near identical to most of the pizza I have had in NY, but it costs a lot more.

There have been many people from chicago who have tried, all in vain, to set up an Italian beef stand elsewhere in the country and all have failed. WHY? For sure they should have been able to do it, they have the same recipe. But the ingredients are not the same. You have to substitute local ingredients. Going back to pizza. So first off the water is not the same. Water tastes different in every city. Because of that your dough will be very different. Meat comes from different places and the cattle or pig or whatever may have hbeen feed a different diet therefore making the meat taste different. The tomatoes are grown in a different climate and again we go back to water that is used to irrigate the crops.

Most pizza sucks and believe me... there is lots of ***** pizza in NY. Sbarros or Rays are perfect examples. Decent dough, a coal oven hot enough to smelt ore, sweet sauce, water mozzarella fresh basil and you can get pretty damn close. Most places use ***** ovens, ***** sauce, old ingredients. Ie. Dominos. I used to have a hand full of great local places to go to, including an amazing little hole in the wall place across the street from the Park Ridge mall. My theory as to why NYC pizza doesn't translate outside of the region is that the actual people making the pizza don't understand how it should look, taste and feel. Sure, the owner might understand, but Billy the HS kid in Iowa who is making the pizza, sure doesn't. Not to mention, tastes vary region to region, and NYC style pizza isn't what people want to eat...so pizza places cater to local tastes. Its really that simple. In this pizza-eater's humble opinion, it's the only place outside of New York that can do pizza better than New York, but it really is the very best.

Crazy Doughs is an example. I used to live near it (this is the one near Boylston and Mass Ave) and for a while their pizza was awesome. Then it went straight to hell.
Upper Crust in Coolidge Corner was consistently good but I usually like my pizza a little thicker. Still we ate that for years and I still grab a slice now and then when I'm over there.
The original Pizzeria Regina (not the chain) was awesome the first time I went there but when I took some family and friends there again it was very disappointing.

Most of it is crap, with a small fraction of it being excellent thin crust pizza. The thing is, the NYC metro area has nearly 20x as many people as san francisco. If only 1 in 10 pizza places in new york is worth a damn, it still has more than SF does.
Now SF may be full of soggy pizza with organic free range cruelty free artichokes, but there are still some gems here. I haven't found a pie here that can match the thin crispy awesomeness of the original Patsy's on 117th and 1st or di Fara in brooklyn, but there is still some world class pizza here.
If you can stand dodging crackheads and hookers, try Chico's on 6th and mission in SF. Huge crispy slices, excellent sauce, crust, and toppings. A slice with feta and garlic is probably my all time favorite pizza.
We also do deep dish pretty well. Check out Little Star on divisadero or the other one on valencia. Ultimately, the search for a good pizza is about eating something delicious not participating in a pissing contest between cities. If New Haven's clam pies are better than Lombardis', so be it.

- Jaxim, on 04/25/2008, -2/+9I've been living in Manhattan for a little over 3 years and i have to say that it's incredibly difficult to find good pizza here. Pizza made in New Jersey is better. I haven't tried it, but perhaps pizza from the other 4 boroughs are better, but Midtown Manhattan pizza sucks. The crust is too thick, there's too much cheese and not enough sauce for taste.

As far as pizzas go, you're right: Jersey > Manhattan. But Brooklyn > anything else. And the secret to good pizza is tomato sauce, thats why its best in the tristate area, because no one knows how to make the sauce
