  • WasabiBomb, on 04/25/2008, -1/+14My favorite sushi chef introduced me to "super white tuna", or escolar, several years ago. I really liked it, and made sure to pick it up when I saw it at the fish market.
    Yeah. That didn't go so well. I didn't know what caused it, so I bought it again a few years later- and had the same symptoms. A bit of research on the fish revealed that a common name for escolar is "ex-lax fish".
    It's a shame- the fish is really good. I'm just not willing to put up with the side effects. :)

  • doublefelix, on 04/25/2008, -0/+9Actually, due to its' insanely high oil count, Escolar is one of the most delicious fish you could hope to find to throw on the grill. Avoid portions over 1/2 pound and you should be fine. I still remember one episode of the West Wing where the 'President' specifically orders Escolar as an entree.

  • superduperguy, on 04/25/2008, -0/+5‘White Tuna’ usually refers to Albacore Tuna, which is a better quality tuna with a milder taste. I’d hope that Escolar isn’t being fraudulently sold as Albacore Tuna. If you decide to indulge in Escolar, just make sure not to wear a pair of white pants.
  • rushiku, on 04/25/2008, -2/+1At the end of the article, they mention that "over 77% of Red Snapper is something else, mostly Tilapia"... how can this be? Tilapia is a fresh water fish, size and shape of a bluegill (8 inches long, tops), the fillets are thin and the flesh is somewhat translucent and finely grained. Red Snapper is a much larger salt water fish, differently shaped, with thick fillets of white, large grain flesh - and - the telltale red/white checkered skin, if present, is a dead giveaway.

    I call shenanigans.

        I have a hard time believing that the restaurant owners and marketers are unable to distinguish between the fish they want and a 'fake', especially in this case.

        Anyway, at least everyone who read my post, including you, can now distinguish between red snapper and tilapia. ;)

  • davekay85, on 04/25/2008, -0/+5It's true, we used to serve this fish in the the restaurant I work at and the staff constantly made jokes about the notorious Escolar. It's actually really freaking tasty, but you shouldn't eat more than 5 ounces of it. That's when the side effects kick in.

I prefer it raw but I've noticed lately that its more common for it to be seared at least on one side (which changes it's taste a lot). Its been banned in Tokyo for like 45 years (for this very reason), so this really isn't news in the sense that its new. Anyway, I _always_ have three to four pieces of esoclar whenever I go for sushi, and I've never had any problems. Tuna has mercury and esoclar makes you poop... Yet I'm still alive after eating lots of tuna and I haven't been forced to drop a deuce because of escolar.

  • esaks, on 04/25/2008, -0/+8In Hawaii they call this fish Walu and ate it a month ago and suffered the full affects. The best way to describe the "anal leakage" is this. Imagine every time you fart, you fart out olive oil like a can of Pam spray. When you try to wipe it off, its like trying to wipe off baby oil. You need to wash yourself with soap. I am not joking. It smells really bad, but not like poop. more like really strong mineral oil. I was miserable for 2 days.

      But based on the orange leakage, they really ought to rename the fish "Orange smoothy." It really helped me have, um, smooth passage.
