Tim Hortons - Probably little (if any) profit due to the extreme distance. However, it's huge, huge PR and advertising. Supporting troops, simply being on the news, etc.

Because they think outside of the box and open a RESTAURANT next to a TOURIST ATTRACTION that has lots and lots of FOOT TRAFFIC, and where the PEOPLE have probably been ON THEIR FEET for hours and are HUNGRY and THIRSTY.

Its directly across from the facade of the Pantheon in the north west corner of the square. If you look in Angels and Demons they keep the cameras away from the top left corner of the square because they don't want the golden arches in the shot.
