- Mujokan, on 10/30/2009, -0/+2Not that I know anything about it, but I would have thought it was because you can get away with sharper and more acidic tastes with fish in the same way people like lemon with fish. Acidic red wine tastes rough. But if they get such results from iron, I guess that's cool too.

Where white wine is better with light fish like tilapia or halibut. But that just my palate, to each their own. After all, every persons preferences can't be forced to enjoy food the same.
