- Salviati, on 06/13/2008, -10/+137The salt doesn't make nearly as much of a difference as the author seems to think. It is true that adding salt to the water will lower the freezing point of the water by a couple of degrees, but it won't make a lot of difference over 3 minutes. And besides that, the freezer doesn't instantly drop the temperature of the water to the new freezing point. In three minutes, the water probably won't change by more than 0.25 degrees. The real difference here is that the drinks are in contact with water instead of air. If you set the drink in the freezer without it touching anything, it will take a long time to cool down because air is a very bad thermal conductor. Water is a very good thermal conductor, so it removes the heat quickly.
Think of it this way, if water at 31 degrees (with salt) can bring the drinks from 80 to 40 degrees in 3 minutes, water at 32 degrees (without salt) won't make a real difference.
Also, stop referring to this as 'dry ice'. Dry ice is frozen carbon dioxide and it is so cold it boils at -100 degrees! That would freeze your beer on contact. - DeskFlyer, on 06/13/2008, -2/+92CO2 fire extinguisher will give you cold beer in about 10 seconds.

With a molar mass of 58.44 g/mol, that gives 6.14 moles of NaCl, and a molality of 6.14m (1kg H2O).
With a van't hoff factor of 2 for the 2 ions in solution and a molal freezing point depression constant of water of 1.86, this yields a freezing point depression of 22.84 C.
Granted, this is using the solubility of NaCl in water at 25 C, which would be somewhat decreased at a low temp. Also, the van't hoff factor would be less than exactly 2 due to some association of the Na+ and Cl- counter ions in solution and the failure of water to complete solvate the charged species.

1. He took 6 hot beers from my garage and he placed them into a steel pot from the kitchen
2. He tossed in enough ice cubes to completely cover the beer
3. He then filled the pot with water
4. Next, and this is the trick, he tossed in (what must have been) 2 cups of table salt.
5. He took a large wooden spoon and stirred this thing up to be sure the salt dissolved.

It allows the ice cubes to dissolve into the water much faster, lowering the temperature of the water so that it can chill the beer faster, because of the larger difference in temperature between the can and the water. The water doesn't start at 32° right away. It comes out of the faucet, remember.
