I find there's a large contingent of meat-eaters that react to the self-righteous vegetarian (who's more of a straw man than a reality) by telling me that they LOVE meat. Putting it rather simply, you have bacteria that do well with digesting meat, and bacteria that do well with digesting vegetable matter, in your intestines. If you don't eat much of one, they tend to die off so you have fewer able to help you process it.

If you stop eating meat, your body produces very little of these enzymes. If you suddenly eat meat, your body can not digest it until it has time to increase the protease level. Assuming you slowly increase the lipids and animal flesh in your diet it takes about a week.

I'm not defending self righteous vegetarians, but if they eat meat it can make them sick.
