- Oatmeal, on 11/10/2009, -3/+426Thanks for the diggs, everyone. I had to consult a friend of mine who is in pharmacy school on the adenosine part to make sure I got it right. Apparently caffeine attaching to the adenosine receptor causes an increase in neuron firing (I'm not sure I understand what "neuron firing" means), but that's what makes your pituitary gland get all bent out of shape.

Especially pointing out that espresso is a brewing process, not a roast or blend or type of bean. Huge misconception.
Also, interesting (and mentioned it in a post above, but I want people to see it), dark roast coffee is really just burnt coffee, covering up the flavors of low quality beans.
Today I cupped (coffee geeks language for 'tasted') about 25 coffees, all from either Bolivia or Ecuador. It is amazing how coffees from different farms can taste.
Coffee has some 500 flavor variables, whereas wine has around 250 (numbers are off the top of my head, but it is something like that). So really, coffee is MUCH more of a complex beverage than wine in terms of flavor.
Not to mention that you can have the best coffee in the world and still ***** it up by not brewing it properly, roasting it too dark, or letting it spoil (coffee is good for about 10 days after roasting).
Now I just sound like an ultra-pretentious *****.

Now I am actually in Minneapolis working at a specialty shop, but in the process of trying to open a new place. It is fun because the specialty coffee scene out here is tiny, so there is a lot of educating people involved.

Starbucks (or other major chains, Tullys, Peetes, Caribou, Seattles Best...etc) uses very average quality beans, and over roasts them, giving them a slightly bitter, but strong flavor.
Coffee should actually be viewed more like a steak. You would never ask for a high quality steak to be well done. 'Well done' in this case means burnt, and imparting the smoky-grilled flavor. In a high quality steak you want to impart as little flavor as possible, and unlock the natural flavor.
Same is true with coffee. If you have a cheap coffee, burn the hell out of it so it is bitter and nasty.
If you have a high quality coffee you should roast it light, so when you are drinking it, you are tasting the coffee, not the 500 degrees.
*also, 500 degrees is a pretty high temp. at my shop we usually go up to 470 for a good lighter roast. - LegomanArt, on 11/11/2009, -0/+15Then why are you on this site exactly?

- warispeace21, on 11/11/2009, -0/+13I roast my coffee at home. It's actually more of a soft crackling sound. The first crack is louder than the second. It also flakes off chaff as it roasts. Coffee beans are a pale green before you roast them, and they actually increase in size.

Moisture inside the beans (or corn kernels) boils, builds up in tiny pockets as steam.
