If a handful of salt is ~ 1 gram and he was dissolving it in 2L of ice water, he would make a solution that is approximately 0.017 molal (of ions).
Using the molal freezing constant of water of 1.86ºC/m, the freezing point would depress by 0.032ºC - basically nothing. He would need to dump a TON of salt in the water to really depress the freezing point.

A handful of salt is more like 15-20 grams, and he could have less than 2 L water with the amount of ice he had. Your point is still valid though, it would drop less than 1°C

You've got a body of 80 degree soda (~27°C) in a body of 0°C ice water (forget the salt). After two minutes you end up at 43°F (~7°C), a 20° drop in temperature. That mini soda can probably had about 8oz of volume (~.24L). So the average heat transfer rate is 40 W. Ballpark the surface area of the can at 0.3 sq. meters, neglect the insulation of the can since it's thin and conducts heat much better than the coke, and your heat transfer coefficient, h=7 W/m^2-° which is kind of low for water.

But i guess if you remember to actually make salt ice cubes you'd also remember to put your coke in the fridge.

Take chem 101 again - there is only a small freezing point depression ( Na+ + Cl-) and the 1st Law of Thermodynamics and Newton's Law of Cooling (heat transfer), the drink is cooled more quickly than normal. Note: The reason is that the lattice energy of NaCl is outweighed by the ionization energies of sodium and chloride.
