Those crumbs are indeed chocolate sprinkles. In Holland we call it hagelslag and we use it as sandwich topping. There are different flavors: milk, white and pure chocolate, there's even colored sugar with additives.
Vlokken are similar to the hagelslag, only bigger.

We made a 9 minute claymation video that took us over 100 hours using a camcorder interfaced to Adobe Premiere (that loved to crash) through an (ISA) ATI TV tuner card. My still camera will take far more consistant exposures than any consumer video camera I know of. It even has a feature specifically for taking a large number of shots with identical exposure settings. I think all new Canon cameras do.
