It's an actor in front of a green screen with very good nunchuck skills dressed up to look like Bruce Lee (good job of it) that was told to act as if he was playing ping pong. He was filmed in different angles against this green screen and the editors looked for the best times to use his nunchucks as an actual ping pong return. Since he is revolving his nunchucks so quickly, it's hard for us to see if the hit angles with regards to the ball are realistic or not.
