I know of over a dozen woman I work with who are doing exactly what you said above for their kids. All but two of them had sex before they were married and got pregnant. About have of them aren't married now. The one of the two willing married a man who she knew wasn't faithful before the ceremony and had 3 kids. According to IMDb, the only time she wasn't credited as Angelina Jolie was in "Lookin' to Get Out" in 1982 (when she was 7 years old), and from what I've read, she hasn't even spoken to her father for years.
Nicolas Coppola also changed his name to avoid his success being attributed to his uncle Francis Ford Coppola. You'd know him better as Nicolas Cage. It's not uncommon for actors to change their names so they can actually try to make a name for themselves.

Angelina may be a flake and a bit weird in the 'collecting the 3rd world baby set' but she is signifigantly trying to use her star power for a good cause in humanitarian aids. When's the last time you seen any of the new set of women actresses out there in the middle of Africa or at the United Nations working for a cause she has no connection too?
As far as her acting chops, there is MUCH MUCH worse out there in terms of range and delivering a reasonable believability. Plus, she has no qualms about getting butt naked if the role calls for it....and Gia did. Hooray for boobies.
