They could have some sort of Friday launch event at AT&T stores and Apple stores (since both will be selling the iPhone). actually i think most versions of OS X have come out on a Friday or Saturday. Friday releases makes it easier for FedEx to deliver them to places of work etc, but i think OS X 10.0 was a Saturday.
