A man of his age does not lose weight so dramatically and grey so quickly unless there is a significant health issue.
Hormone imbalance may not sound like a likely scenario, but it could lead to the weight loss problems we can see. Jobs may be low on pancreatic enzymes due to his cancer surgery, which would also imply a significantly large part of his pancreas was removed. To stabilize his condition he would be taking pancreatic enzyme supplements with meals. If he doesn't do that, or the dose is wrong, that would interrupt digestion and cause weight loss, just like we are seeing. However, Jobs doesn't say what hormone or hormones are out of balance in his letter, in fact there is no medical information there at all.
The letter was written entirely to calm investors, shareholders, consumer base. It is therefore almost certainly not the whole truth (duh).
