In Windows and most distros of *nix use Ctrl+X rather than Command+X, but it is otherwise the same.
I know almost no-one who doesn't know that:
z = undo
x = cut
c = copy
v = paste
s = save
o = open
Many don't know w = close, as many win programs lack this shortcut, but the rest are pretty well known.

The "Open Apple" comes from the Apple IIe, which had both Open and Closed Apple keys.
The Open Apple came to the Mac in 1986 when Apple standardized on the ADB keyboards for both Apple II and Mac platforms. IE: In windows CTRL + N = new window where as mac is Command (the symbol in the pics) + N = new window

In a multi-window program (such as Pidgim), Alt+F4 closes the current window (⌘W). Unless it's the last open window, in which case it quits. Unless the application stays on the system tray, in which case it just closes the window. Unless the application is set to quit when the last window is closed and go to the tray when that window is minimized, in which case it quits. Yes, consistency is nice.
