The patent says:
"Display screen 500C may include options 510C for resources or applications available to the users. In some embodiments, options 510C for the same resources as other display screens may have different appearances (e.g., different icons). For example, in FIG. 5C, the options displayed for the Mail, Clock, Photos, YouTube, and Calculator applications may be different than those displayed in display screen 500A of FIG. 5A"
So Apple are saying "Hey we want the patent on this, and here are images of what it looks like on the iPhone. BUT, if people jailbreak their iPhone, steal our patent and then say - I didn't steal your patent because your patent shows an interface like this and mine is different because I've jailbroken it - they want to cover that base too.

Of course, it's not labeled as an apple product. However, it's a great way to beta test software.
Perfect example: Clippy. Take a look at the evolution of it, and then take a look at iphoneOS 3.0 with the cut and paste. They are almost identical.

Patent attorneys don't usually make their own drawings, but rather contract them out to a draftsman or graphic artist. I imagine the draftsman just pulled a random iPhone image from Google and traced it, and it just turned out to be a jailbroken iPhone in the image.
