Apple is doing what it has to, but will let it drop once they loose, which they know they will. It's just a formality to show that they are protecting their brand.

Apple Computers has had a lot of variations on their logo over the years. Show any logo with an apple in it, and you can find one from Apple Computers that matches. The one in the story is a far cry from the one on my old Apple.
Victoria is an apple-growing area. They have every right to use an apple logo. And they too have the right to protect it.

A school usually has teachers which is a well known fact that apples are a stereotypical thing for them. So using an apple for a schools logo makes sense. I have this huge doubt that when they made the logo someone said "Go for an apple because holy ***** Apple uses it!". I would have never saw that logo and thought of Apple computers. ***** Apple!

Apple is probably basing their claim on a doctrine called trademark dilution, which basically prevents your trademark from being associated with a non-competing class of goods/services. If you let things like this slide then people will cash in on your reputation to sell anything. People will see the apple mark and think, "Ah, Apple, don't they sell toilet paper?" Then, the mark will lose the distinctiveness that the company has tried hard to maintain over a long period of time in the area of computers. That's the theory anyway.

We at Penn State had to sue many smaller schools because of their logo use, even when it was just an elementary school. If you don't take action for every occurrence, you can run into a problem. The company has to protect it's image.
